DO NOT BUY CHEESE. The secret is in the butter! Simple, tasty and affordable for the whole family. All you have to do is mix the butter and milk together to make a mascarpone. This mascarpone recipe is very simple. Be sure to try the cooking! 🤗
Ingredients for 200g mascarpone:
100 g (5 tbsp) butter 82.5% fat
370 ml (2 cups) milk
1 - 4 tablespoons of lemon juice
1/2 teaspoon sugar

    This might seem like a very time consuming process for people that belong to countries where different types of cheeses are very easily available but for someone in India, this recipe makes complete sense because the only cheeses that are commonly available here are Mozzarella and Processed Cheese. Indians, predominantly, eat cottage cheese (paneer) which is great for cooking but it doesn't melt or spread. It is prepared in a similar way as mascarpone.

    In my household we make this weekly, we use leftover milk to make what we call Paneer, it's similar to ricotta cheese I guess plus we don't use butter. And yes we still do buy cheese slices or spreads from the market since they're more flavorful. Paneer is an essential part of indian cuisine so it's not really used the way it's used in West here.

    Interesting. Where i live, cheese is readily available, but if 2020 has taught us anything, it is how fragile our supply chains are. Also, I would consider making this over buying it given that I am in control of the ingredients. No dye. No extra sugar or salt. No weird chemicals i can't pronounce.     Maybe I'm missing something, but I'm confused as to why one would spend more on the ingredients than it would cost to buy the final product ready made? Remove the butter and use full fat milk for a cheaper yet better cheese 🧀😋

    Whole milk it's used to make cheese... Or you can separate the protein and the liquid to have butter and "zero Fat Milk". (that in my word is not milk), but back to the subject, mixing "zero fat Milk" and Butter to make cheese its a reverse and expensive process...

    Its very useful thank you, if i didnt misunderstand you make the startup with heavy cream and later turn it to mascarpone with lemmon.. great idea, especially in geographies that you cant find economical mascarpone, though health factor comes first, simply thank you.. one question: why do you use sugar and salt at heavy cream phase and sugar with lemon, is there any technical reason or is it ony for taste?
